Red wines

Red needs a little more care than the other colours in the tropics. The heat of a boat ages it quickly and accentuates the alcohol: favour supple, fruity wines meant to be drunk young over structured bottles that deserve better than a locker at thirty degrees.

Served slightly chilled, a light red works far better in the Caribbean than at room temperature. A quarter of an hour in the fridge before serving transforms it.

It goes with meat, slow-cooked dishes and cheese, and remains essential for crews who cannot picture dinner without it. Bag-in-box is again the safest format under way.

Alcohol is sold to adults only. Please drink responsibly.
