White wines

White wine is the natural companion to Caribbean cooking on board: grilled fish, seafood, accras, salads and cheese. Crisp and dry or fruitier depending on the dish, they mainly ask one thing — to be served cold.

That is where the organisation happens: plan to chill a few hours before the meal rather than hoping to cool a bottle at the last minute, especially if the fridge is already full of fresh food.

On long cruises, half bottles and bag-in-box avoid opening more than the crew will finish, which would turn within a day in this heat.
